YOU callin ME a FATTY?!?!?
Why yes, yes I am.....
Well since I had the smoker fired up and I happen to have some fatty fixins, I thought why the heck not!
simple, yet tasty
I place the sausage out on wax paper, lay another piece of wax paper over the sausage then roll to desired flatness!
Little Provel cheese, not too much, this stuff goes a long way....there ya go
Ok now gently roll it back up and seal all the creases then dust it off with some Wolfe Rub Original

I love smoking them fatties.I like the way that you rolled yours out.I just flatten them out by hand.I'll give your method a try.Last Mon.,I smoked some Turkey breakfast sausage.I stuffed them w/cheese,onions & peppers.I put the apple rub on one,maple rub on the other.I like them better then JD,& much cheaper.

If you roll it use wax paper...the sausage won't stick to it like saran.
I gotta pick up some of that turkey sausage....how's the consistency?? chewy? rubbery? taste like regular sausage??

Personally, I have been banned from cooking any more fatties after my first one. It proved to be such a diet-buster that the out-laws and friend have said "No more!" I guess they can't trust themselves around the temptation.

Temptation it is! It's so much easier to eat more off a fatty than just slicing it into breakfast patties....before you know it, 1/2 the thing is gone!
