Brisket dripping recipe?

Can anyone give me any ideas about what to do with the brisket drippings? I've been letting them drip on the next piece of wood to go on the fire. But they look soo good, there's gotta be a recipe for something!! Thanks. :3some: :3some:

Gogo, don't waste the dripping! Like Gator said put some in your BBQ sauce, catch em in a pan and baste your brisket while cooking or after you slice it.

Man, alot of flavors are in those drippings! 8)

I personally cook mine briskets in a foil pan because the aus jus is so good. I defat the drippings and pour them over the slices that is the only BBQ sauce I use just the drippings.Save the fat by freezing in ice cube trays then transfer to zip top bags. I add it to my beans.for extra flavor or melt some in a skillet to warm tortillas when making enchiladas. cooking home fries are good too.
Never met a cow I didn't like with a little salt and pepper.

I saw Jonny Trigg adding a bit sauce on his brisket slices. I think this was the sauce in the foile... Surely a good thing what to do with the dripping...

If ya have leftovers and ya will freezer this in a vacuum bag, put some of this in the bag, to keep the leftovers moist, during preheating.
Good idea is tho freeze the sauce before ya put it in the bag. If ya put the liquid suace in the bag, the vacuumizer will all suck away... ;-)

bbq sauce, marinades, injections, chili additions, anywhere beef bullion is called for,probably a few other things at least. these were just off the top of my bald head. hahaha

I wrap my brisket at the 160-160 mark. When Its done I defat the juice and wisk in some butter. Dip my slices in the butter juice combo for comps. for home use I just slice the brisket and put in a pan. Then pour the butter mixture over the brisket.

BluDawg,

Now that is what I am talking about. I do the same on my briskets so I can use the au jus. I mix it with BBQ Sauce, mustard, other stuff and it turns out to be a great dipping sauce. The tortilla idea for the enchiladas is a great idea and one of the reasons I love this site. Great ideas.

I use something similar to this. You pour the liquid in the separator and in a few minutes the fat rises to the top. The spot is below the fat so you can pour the juice out.

This is what I use http://www.acehardware.com/product/inde ... Id=3510139 I Got mine at Target. Just about ant good store that sells kitchen stuff will have this one or something similar. or you could pour it into bowl and put it into the freezer for awhile. The fat will come to the surface and congeal then you can remove it with a slotted spoon and rewarm the aus jus.

That makes some of the best beef stock for beef stew you've ever had. Put it a cup and let it get cold, all the fat rises to the top and you can cut it off and throw it away. What is left is pure deliciousness.

Or, collect in a pan and pour into a measuring cup. Put in the fridge and let the fat get solid. Remove the fat with a spoon and you have Au Jus.
