"Brisket"
Last friday afternoon, my wife says she's in the mood for brisket.
No way can I make one in time for dinner, so I figured I'd try to smoke a roast instead.
Kept it simple: Salt + pepper, then threw it in the electric smoker until it hit 180. Took about 4-5 hours.
Came out pretty darn good. It wasn't nearly as moist as a brisket, but wasn't dry either. I sliced it pretty thin and the flavor was pretty great.
Happy wife.

Creativity at it's best. If it tasted as good as it looks it was mighty fine

OK if I can be so brazen or disrespectful.... only because I have had lots of practice... I think both are upside down the grill should be on the gravitational side.
But something I have been wanting to do is a rotisserie roast some time.
I wish I could help you with the upside down thing ... I always have mine on my computer right side up, the iPhone is a problem child for getting orientation correct...
