SuckleBusters Test Kitchen Samples

'Busted Pinto Beans
1 lb Dry Pinto Beans
3 Tbl SuckleBusters All Purpose Seasoning
1 Ham Hock
1/2 Baking potato sliced in 1/2 inch sections
Soak the beans in water overnight, drain, rinse and put in a Crock Pot. Add the SuckleBusters, ham hock and potato slices. Fill crock with water. I usually cook on high 'til it hits a slow boil, the reduce to low until I'm ready to eat. All told you can put on early in the morning and be done mid-afternoon or easily by dinner. Remove and discard potato before serving.
If'n you want to get fancy - throw in onion, bell pepper, diced tomato, chiles or any type of peppers. Any combo of that stuff makes it mo better.
Serve with corn bread (prefered):

Or wrapped hot flour tortilias with cheese and hot sauce. Yum. Yum.

Got mine on Thursday, did up some burgers
Finger in the bag:
1 - kinda hot, nice
2 - less hot, more afterburn
3 - slight initial bite, mild
4 - initially mild, nice afterburn
On burgers:
1 - great flavor, nice afterburn
2 - subtle flavor, heat didn't carry through
3 - nice mild overall taste
4 - subtle flavor, not much afterburn
For the masses, I'd go for 3 being the best, and 4 being the lesser. I'll add it to the polls. Thanks for the samples Gator ! Good job!

Finally had some time to do at least the look-smell-finger taste tests. Wanted to write my initial observations.
Visual:
1. Good color, light reddish tone, good texture with individual spices seen.
2. Slight grainy appearance, darker rust red tone.
3. Similar texture to 1, rust tone.
4. Good color, reddish-pink tone, more uniform texture.
Ranked: 1-3-2-4
Note: 1 and 3 could be flipped. I prefered the red tone over the rust, but that's all. 4 was too uniform to me. I like seeing the individual spice.
Smell:
1. Strong smell of chili-powder/cumin?
2. Not much smell that I could tell.
3. Good odor. Not over-powering.
4. Again, good smell. Less odor than 3.
Ranked: 3-4-1-2
Note: I like the spice smell, but 1 was very strong, IMO.
Finger taste (all samples were very salty to me):
1. Good balance of flavors, but not much heat.
2. Again, no real heat, seemed saltier than 1.
3. Initial bite of heat, faded quickly. Heat hid other flavors.
4. No initial burn, but heat crept up on you. Good balance with flavors.
Ranked: 4-3-1-2
Note: I like heat, and 4 was the best here. 1 and 2 didn't seem to have much there. Good flavor balance with other spices in all the rubs.
So far, the best overall has been 3, with good visual, smell, and taste results. The cook test should be the next couple of days, so that'll be the breaker.
