Issues with my Chile Powder

CF, this may be right down your alley. Anyone else please pitch in.

I am having problems with consistancy of the Chile Powder I am getting. I use New Mexico 100% pure. I have noticed that depending on the supplier (and sometimes the lot) I will get a very different powder. Different color/different taste/different heat level.

Is it normal to see such a different across suppliers and batches like that?

Will say it total normal. Least thats what the produce man say about japs. Some is hot and some aint. Depends on the growing conditions..how much rain they got etc. Cant imagine a New Mexican peppa being much different.

I figure my only cure for this problem is a decent blend, let the chile experts figure out consistancy. Problem is, most blends heap a bunch of stuff in ther you cant pronounce, much less spell or understand. You ever look at the ingredient list on some of those blends? YIKES! :dont:

I've heard good things about these folks and they are from Boulder CO, so you know it's probally organic and free range type products :lol:

Yes, I have ordered from Pendrys, they are set up for small orders. Their price per pound is way high.

The Fort Worth light blend they make is very nice and in a lot of chili recipes around here. Good stuff.

I got mine from myspicer.com I was happy with them. Nice n fresh...and the best price.

I always shop at Penderys. Seems like I heard if you want to buy a bunch they get cheaper. Get em to shoot you a price on 50 lbs.

Since I don't buy this stuff is large quanities, I've found that the ethnic mom&pop markets sell alot of spices a whole lot cheaper that the conventional shopping centers. And there is never any dust on the packages either. Granted, they don't have everything.

I found out that I was asking the wrong Penderys for bulk orders. For bulk spices you have to "call the warehouse", which is in Irving. They price it out by the order, you provide a ingredients list.

I may swicth to Penderys if the pricing is right. I always have liked the Ft. Worth light blend...

Follow-up.

Penderys is very price competitive, I plan to use them for my ingredients. For anyone in the DFW area, they would be a good spot for spices...FYI they moved to just south of downtown, by the hospitals.
