Head Country Marinade

Anybody used this on brisket, if so, did you use it before smoking or when you wrapped it to finish it? I like the bbq sauce, was thinking of giving the mariade a try, if someone has liked it.

I have never tried it, so can't comment. Might be worth a try if the ingredients look good. CF

Well in the past they really touted some stuff called Radiches Bor Delay Sauce (sic) or something similar. They recommended it for a pre cook marinade on everything. I fell for it and bought a case. The stuff was absoloutely horrible. In fact I think I still got a few bottles left over from about 7 or 8 years ago. I give you a bottle next time I see you. I been slowly trying to give it away over the years. If they got something other than that junk I aint heard about it.

Sorry BW, not the same stuff, unless they just changed the name. Well,
guess I'll order a COUPLE of bottles and report back. Always good to have 4 or 5 guys say good or bad and not have to waste the money. It's ok to give my bottle to someone esle more deserving of that fine product you have left over from 7 or 8 yrs ago. :D

BTW I got a gallon of Stubbs chicken marinade from my secret source I'll need to do a chicken and let ya all know what it's like.

Ok..good plan. When you use that up try the spicy wing marinade. Thats whut my old pal hit with at the big cookoff.

Well the results are in, used the Head Country on the brisket, also used Stubbs Chicken marinade. Here is what I think. Head Country was really good, used it this way. Did not use it before cooking, used a 1/2 bottle when I wrapped it. Pulled and wrapped at 160, put back on and took to 205 and pulled and put in a cambro for 5hrs. Took out of cambro, let set for 1 hr and sliced and really was good. Great flavor and very juicy to have cooked to 205. By the wat it was a flat.
Chicken was done this way, brined with just water and kosher salt and 1 bottle of Stubbs poured in. 1/2 chickens was the test. brined for 12hrs and then cooked on my pit at 300. Actually over cooked the chicken didn't get it pulled to the breast was showing 168, but that chicken was very good, breast still juicy and very flavorful from the Marinade. going to give them both a try in the next cookoff.

Ok well thanks for the repoat. Sounds like the HC highest calling might be for a mop/sop type deal. Maybe a person could use it to whup Shivers:)

Where'd you find the H.C. marinade. I really like the sauce - doctor it to suit my needs. I'd like to try the marinade - haven't seen it. I get the sauce at Wally World.
