Teriyaki and Sweet & Sour wing sauces

Postby TX Sandman » Sun Feb 24, 2008 8:03 am

Rob's Teriyaki Sauce
3/4 cup pineapple juice
1/4 cup low sodium soy sauce
1.5-2 tbsp brown sugar
3 cloves garlic, minced
1 green onion, chopped
1 pinch red pepper flakes

Mix the ingredients and simmer for 20-30 minutes. Adjust spices for taste, adding sugar or other ingredients as needed for taste.

Sweet & Sour Wing Sauce
1 cup brown sugar
2/3 cup vinegar
1/4 cup low sodium soy sauce
1-2 tbsp tomato paste, to taste (or ketchup, if this is what you have)

Mix and simmer for 15-20 minutes. This sauce was *very* sweet from the pan, but on the wings it was amazing. It wasn't real thick, but a longer simmer or some flour or corn starch could help that.

I used Dole's 100%, not-from-concentrate juice, no sugar added. I added sugar because the sauce wasn't as sweet as I wanted.

Note, the juice was from a 6-oz can originally bought for the Cornish BCC hens. You should be able to find a 6-pack of cans in the canned/boxed juice section of the store.
