Green Sauce - Salsa Verde

Copied from another post:

8 - 10 Tomatillos, husk removed, quartered
2 cloves garlic
1 small to medium onion quartered
2 - 3 serrano chiles, stems removed
salt and pepper

Gently boil in 2 cups water, drain, chunk in the blender and let-er-rip until smooth. You can use chicken stock if you eat right away or put in the fridge. Another variation is a little sugar to make it sweet. Ive also seen 'em throw an avacado in the blender for smoothness or cilantro for a more tex-mex style.

I'm not a big fan of tomatillos, actually no one in my family is. If you can find them, try using green tomatoes next time. I think you will like the results. Also, instead of boiling, put some oil (1tbs) in skillet and cut the toms in half and place them cut side down into the skillet. Put the onions and garlic too. Once they have all softened, put everything, all the juices etc into the blender. Whole different flavor than boiling.

I really like the idea of browning or roasting the ingredients in this recipe, sounds like a good improvement, I need to try that next time...Thx. :wink: 8)

It’s definitely better with the tomatillos and peppers cooked. I like to stick them on a baking sheet under a broiler for about 5 minutes per side, just until they start getting a few char spots. Then dump everything into the food processor.

Rex, have you tried using Hatch chilis instead of tomatillos? Personally I love them both, but Hatch is definitely my favorite. :tup:

Seriously though, if green tomatoes can make a good replacement, Hatch green chilis should too. :P :mrgreen:
