Beetroot chutney/ relish

Postby Kiwiruss » Tue Mar 28, 2017 10:25 pm

This goes really great on a steak or burger, I've had it about 4 or 5 times at my local, and I'm loving it, so I bit the bullet and mentioned it to the wife, ( pinky) her nickname for 30 years. She duly obliged this morning by bringing home 8 nice size beets. I googled and picked out 1 think is close to what I've been getting. Beetroot n onions peeled then into a pot with splash of oil, yellow mustard seeds, 1 teaspoon coriander seeds s and p balsamic vinegar malt vinegar and sugar, boil for 60 mins until it gets thick, put into sterilezed jars, those pics to follow. We seem to be big down here on beets. I've always loved beetroot, I bottle ordinary beetroot for the family but this is my first go at chutney, looks and smells Devine.

Forgot to mention the beets and onions were blitzed to small pieces.

Sometimes we need to step outside our comfort zone, this is the finished product.
