Ok so I grilled 6 red bonnet peppers aka capsicums, then I peeled most of the char off them, left some as it gives a smoky taste to the sauce . Then cooked 1 hr with chopped chillies, vinegar, sugar, salt,

Then put in a kitchen whizz and blend then bottle.
I'm happy with the product. I'll make another batch next week.

Excellent.
I like making hot sauce and give a bunch away to family and friends. My last batch was pretty hot and smokey.

Yeah I got some mates and my kids just love heat, I won't use any of the sauce I made, it's entirely for family and friends. My wife's just made a chilly Indian relish for our friends also. She grows chillies by the hundreds. The pic I put up of my chillies was half of what went in the brew.

The colour was not as red as the last lot I made, that's because the wife only got half as much bell peppers as requested. But I'm still very happy with results. Daughter took a bottle home. She said a real good heat followed by long heat.
