Diablo Sauce with Fennel Mango
Makes 2 cups
1 onion medium finely chopped
2 garlic cloves large minced
1 T. fennel seeds
2 serrano or 1 jalapeño quartered seeds retained if a more fiery
effect is desired
2 red bell peppers coarsely chopped
1 ripe mango large pulp or flesh
2 c. chicken broth
2 T. butter
juice of 1 lime
salt to taste
Melt butter in pan - medium heat - add garlic - onion with fennel seeds. Sauté - stir in peppers ñ mango. Cook 5 minutes before adding chicken broth. Reduce by 3/4. Pour mixture to blender - blend ingredients on high speed 1/2 minutes.
Season to taste with lime juice ñ salt.
