A friend gave my traveling companion a pequin pepper plant at last year's Salado Eggfest. Mr. Pequin has been generous with the peppers so it's time to make a little pequin hot sauce.

EH, the chile pequin is my favorite chile. I have about a dozen or so plants now. I make fresh salsa from mine. you can also use the dried version. I dry some and grind them. The dried is used for seasoning table fair. Your hot sauce sure looks good. CF

Two differences - I smoked the peppers for a couple hours with mesquite and hickory chips and I used cornstarch instead of xanthan. Cornstarch is a 1:1 substitute for xanthan. Pretty good stuff.
