Just to chunk a couple pennies in here...
most restaurants who make HoMadeAwesomeSauce™
use meat drippings from their chopping blocks,
which they just happen to have in copious supply.
In doing so,they come up with a sauce that is pretty
fairly much non-reproducible.
And you can't bottle stuff like that, either.

After watching that episode, I had to pull out the pen and paper!

Smoke Joint BBQ Sauce

Ketchup - 1 qt
Dark Brown Sugar - 1/4 bag
Apple Cider Vinegar - 1 pt
Worcestershire sauce - 1 pt
Soy Sauce - 1/2 pt
Molasses - 1 pt
Cayenne - 1/8 cup
Chili powder - 1/8 cup
Chipotle powder - 1/8 cup

Blend, and simmer for approx 3 hrs.

I also broke down their 77 spice rub.

Coarse Ground pepper - 1/4 cup
