77 Spice Rub

Postby slickyboyboo » Sat Jun 08, 2013 8:14 am

Was watching DIners, Drive-ins, & Dives on TV the other evening, and they were showing a place called "The Smoke Joint". I put together their 77 Spice Rub recipe as best I could, and scaled it down. It's some kind of fine!

This rub is great for poultry, especially good for dusting before smoking wings and drumettes for hot wings.

½ cup Spanish Paprika
4 Tbs White Sugar
4 Tbs Kosher Salt
4 Tbs Granulated Garlic
4 Tbs Cumin
4 Tbs Coarse Ground Black Pepper
4 Tbs Onion Powder
4 Tbs Chili Powder
2 Tbs Cayenne
2 Tbs Ground Mustard

That it does, but it is really good.

I quartered the original recipe, which called for 2 cups of Paprika.

Ok, thanks for the reply and the recipe. Will try it this week on some yard bird and give you my take on it. :D

Recipes high in paprika usually come out with (what I consider) a traditional BBQ type flavor profile...looks to be relatively low in sugar and salt. Paprika is just ground chile peppers. Looks to be a good recipe. 8)
