I did an injection for my roast beef yesterday. Let me know what you think. Came out with a good taste.

2 cups low sodium beef broth
3 tbs margarine
1/2 cup mixed Montreal steak spice and basic steak spice
1 tbs Worcester sauce
garlic powder to taste
1 - 2 tbs of beef concentrate

bring to a simmer for 1/2 hr

inject beef 1 to 1 1/2 hr before cooking

What is beef concentrate? Is that beef base?
Did you grind your Montreal or strain the mix?

I ground the spice to a fine mix.

The beef concentrate is a beef base for gravey or soup

Beef concentrate comes in a jar one brand is called "better than bullion".....they have chicken also...

The jar of paste is ALWAYS better than powder in the plastic container or cubes.

That stuff is like pure salt with a hint of chicken beef or veggie flavor.

I'm sure this is why ol' Myron Mixon likes it, he uses it in his brisket injection. Read any of his other recipes and you'll either see salt or ingredients loaded in sodium.

I agree that there is a lot of salt, but I also leave out adding extra salt.
Between the rub and the concentrate, you can find a good balance and have it not to salty.

I find by adding that little kick of concentrate, it just gives it a better beef taste. Just the broth, I find it tastes waterlogged. If salt is an issue, leave out the concentrate. Just a personal thing.
