finishing rub

Postby kevinv » Thu Aug 16, 2012 8:08 am

question about rubs

What exactly is a finishing rub? I heard it on the BBQ pit masters, and seen it on a few forums.
also Is it the same as the first rub applied to your meat?
is there any advantage to using it?

Thanks

No it is different, and used to build a layer of flavors. Some ingredients like herbs don't hold up under long cooks, so adding a "Finishing Rub" with those ingredients towards the end of the cook give a more complex flavor.
Never met a cow I didn't like with a little salt and pepper.

+1

Be careful on how much you use though, it can alter the flavor big time.

I tend to just dust things over a bit with the spices I use in the rub,if any.
More sugar and salt are seldom needed at the end of the cook.

Also, most finishing rubs are finely ground and will almost disappear when you sprinkle them on.

I am going to get a coffee grinder and try making some of my own finishing rub.

My wife and kids got me a small coffee grinder, and I use it to grind spices. I tried it for a finish rub. I love this toy, and recomend it for anyone doing rubs and spice blends.
