Haven't tried this one yet but looks good to me. Maybe chicken first. CF
Watermelon Marinade
Yield: 1 1/2 cups
1/2 cup watermelon juice
1/2 cup balsamic vinegar
1/4 cup brown sugar
1/4 cup soy sauce
2 tablespoons vegetable oil
2 tablespoons Dijon-style mustard
2 cloves garlic, minced
2 teaspoons red pepper flakes
To make watermelon juice: Process small chunks of watermelon flesh in a blender or food processor until they turn to liquid.
For marinade:
In a glass, stainless steel, or ceramic bowl, combine the watermelon juice with the rest of the ingredients. Whisk vigorously to blend. Pour to cover meat or fish, seal with plastic or foil, and refrigerate for several hours or overnight.

I can see you aint skeered of trying something new. IF you like watermelon stuff....my wife just came upon a watermelon salsa recipe called "Fire and Ice" that is just crazy good! I was dragged to the bowl for the first bite....now they have to drag me away from it!
Fire and Ice Watermelon Salsa
3 -cups chopped/seeded watermelon
1/2 cup chopped green peppers
2 Tblsp lime juice
1 Tblsp chopped cilantro
1 Tblsp chopped green onion
2 Tblsp chopped jalapeno peppers
1/2 tsp garlic salt
Combine ingredients; mix well and cover. Refrigerate 1hr or more (overnight is best). Makes 3 cups.
My wife's hand notes say : add salt/pepper/sugar to taste.
She added a bit of sugar because the melon was not the sweetest.

Here's a pic of our second offering. We're serving this up to the camp staff today as a surprise. My dearest is aslo giving them some of our drum smoked, pulled pork tamales......and they are money. Along with them are some chips, the Fire and Ice Salsa, my own homemade garden salsa and some red chili (no beans) for those who want it.
I must say.....the Fire and Ice salsa is killer, but it needs a full 24 hours in the fridge before tasting and final spice adjustment. It changes SOOOOO much as it rests and the flavors have time to blend.
Follow up report after serving- the bowl came back with scrape marks on it! A big hit and now a certified keeper. Wish there was someway to get good melon year round...but the season is almost done for us.
