fajita and chicken marinade

Postby boomer453 » Tue Jul 19, 2011 9:12 pm

this is a fajita marinade i tried this weekend (from another site). i used it on chicken and it is by far the best i have ever tried.

pulse it a few times in a food processor and it makes a nice thick paste.

8 cloves of Garlic (minimum, I use a lot.)
2 Tbsp of Worcesterhire sauce
1 Tbsp red wine vinegar
1 Tbsp of Kosher salt.
1 Tbsp red chili powder
Juice of 1 lime (minimum)
2 tsp of fresh ground pepper
1Tbsp of ground cumin (minimum, I use a lot)
2 tsp of onion powder
Cilantro, chopped. To taste, I use at least ½ -3/4 of a bunch.
¼ cup of of olive oil
3 tsp of red chili sauce
2-4 minced Chipolte peppers. Usually stores carry this pepper canned in an Adobo sauce.

give it a try and you won't be disappointed.

i used it on a pair of flank steaks last week (swapped hatch chili powder for the usual chili powder) and the family loved it along with 2 guests we had over. this will probably be our new version of "london broil". marinated about 4 hours and left the marinade on when we put it on the grill. it has a paste like consistency.
