Okay, help me here..
Hey all!
I volunteered to smoke some pulled pork for a family get-together this weekend. I will probably smoke it tomorrow so I don't have to judge time on Saturday.
Give me your best recipes for sauces!
I want a Carolina style sauce, and Kansas City sauce, and a hot sauce. Juiced up sauces from your favorite bottles are welcome!
thanks,
Laura

We dont cook pushed pork often but have had it as a contest category on quite a few occasions over the years. What has worked best for us in comp is a commercial bottled red tomater based sauce thinned out with apple cider or juice and apple cider vinegar along with a shot or two of sour mash whiskey. Heat it up in a sauce pan and apply judiciously after pulling and mix it up well. Also add some mo rub and salt n peppa tasting it as you go to perk it up propa. Ideally the sauce should be used sparingly as a keep moist type flavor enhancing device. If they can clearly tell its been sauced...you done used too much. It can of course be sauced up mo and differently by the eaters. If I was making some today I would do it like this:
Bigwheel's Grand Prize Winning Pushed Pork Sauce
1 bottle Headcountry Regular bbq sauce (or your choice)
1 cup apple cider or apple juice
1/2 cup raw organic apple cider vinegar
1 or 2 jiggers Jack Daniels or Ezra Brooks Whiskey
Splash or two of Lea n Perrins wooster sauce
Splash or two Frank's Hot Sauce
Additional rub, salt and black peppa to taste
2 t. MSG (optional)
Simmer it up and wet down the pushed pork lightly.

2 cloves garlic pureed
1/2 teaspoon black pepper
1 tablespoon Worcestershire sauce
