RUB for Chicken Pork Beef Adobo Honey

Hj’s Adobo Honey Rub

1 ancho chile seeded dried
1 pasilla chile seeded dried
1 cinnamon stick
1 T. all spice
1/16 tsp. powder gr. cloves
5 garlic cloves
1 T. sesame seeds
2 T. honey or see notes
1/4 c. apple or white vinegar
Kosher salt ñ pepper
Cilantro leaves 1/4 to 1/2 handful or chop
Tiny pinch of Mexican oregano

Heat an iron cast skillet - medium high heat in well ventilated kitchen or turn on vents to roast-dry peppers ñ cinnamon stick –turning ñ roast well - add garlic ñ turn them- add sesame seeds roasting 45 seconds “don’t burn the seeds”. (Remove chilies ñ cinnamon if need be while roasted the rest
Peel peppers ñ remove stem.

Place all ingredients**(see asterisks in a blender– process high speed to almost powder. Add honey- vinegar- salt ñ pepper pulse until all ingredients are well blended. Taste ñ adjust salt ñ honey if needed –sometimes I add **1 tsp. cumin powder with all this.

Notes~ when using on chicken- rub adobe all over ñ under all skin.
Bake 250°F 1 ½ hours turning or grill or smoke as usual.
**Like a little more heat -add some habañero or red crushed pepper flakes.
**Sometimes I add just a tint of nutmeg also for a fruity flavor
Could use turbo sugar in place of honey - to UR taste
