One Hot Tamale Chili Powder Mix

Postby Hj » Sun Oct 17, 2010 6:29 pm

5 ancho chiles dried
1 chipotle chile dried
1 habanero chile dried
2 T. cumin seeds toasted ñ ground or more to UR liking
1 T. Mexican oregano dried (can use some powder
1 T. paprika
1 tsp. ground cinnamon

After making this store in a container – also adjust UR amounts of each ingredient to UR own personal flavor.
I grind most of these ñ sometimes I add some garlic granular to to the mix

Salt I use Kosher but not in this mix along with onion powder. Like to control those amounts with whatever I am cooking or grilling.

Note~ can always add brown sugar or honey after a rub or some different zests (like lime –lemon –orange- marmalades ñ etc.
Cumin powder is another one I like to control the flavor with this or not use it.
A mistake is sometimes a great creation

Now that is what I call Chili Powder.
Never met a cow I didn't like with a little salt and pepper.
