New Rib and Chicken Rub

Postby HoustonSy » Mon Aug 02, 2010 9:45 pm

Hey Guys,
I'll be cooking up ribs and chicken (halves) in the near future. I decided to redo my rub and here's the result. I'd appreciate any comments.
1 cup Turbinado sugar

½ cup Paprika (sweet, Hungarian))
½ cup Chili powder

¼ cup Kosher salt
¼ cup Garlic powder
¼ cup Onion powder
¼ cup Black pepper
¼ cup Lemon pepper

2 Tbl Seasoned salt
1 Tbl Cumin

1 tsp Cayenne pepper
1 tsp Mustard, dried
1 tsp Basil, dried
1 tsp Oregano

Makes 3+ cups.

Well, that about covers it...the seasoned salt is duplicated in your other ingredinets.

Thanks for the reply Gator. Yeah, I thougfht about the seasoned salt additon might be some duplication--that's why I added only a couple of TBLs. Seems to add something (aroma), tho. Check an "actual" Lawry's recipe:
Lawry’s Seasoned Salt Copycat Recipe[/u]•
• 2 tablespoons pepper
• 1 tablespoon chicken bouillon powder
• 1 teaspoon onion salt
• 1 teaspoon onion powder
• 1 tablespoon garlic salt
• 1 teaspoon cumin powder
• 1 teaspoon dry marjoram leaves
• 1 tablespoon minced parsley
• 1 teaspoon paprika
• 1/2 teaspoon curry powder
• 1 tablespoon chili powder
• 1/3 cup salt

I have more rubs than you can shake a stick at and have different preferences for beef, pork, veggies, and even fruit but my geaux to rub for poultry is:

Hoochie Mama

And it is always available in two days with the click of a mouse.

Egged some wings and thighs last night with some sugar cane for smoke :D

No pics because it was too dark but here are some Hoochie Mama poultry pics

I could be wrong, but that don't look like the seasoned salt I use...I'm just saying.

2 tablespoons salt
2 teaspoons sugar
1/2 teaspoon paprika
1/4 teaspoon turmeric
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cornstarch

Well, this is interesting, Gator--thanks for taking the time. Lawry's label of ingredients lists in part "..,Spices (including PAPRIKA and TUMERIC).." I've always wondered what all those other spices are. For example I cooked chili on the Texas circuit for eight years and my base chili powder was Williams. For years they listed some spices on their label including "cilantro." This was later deleted and replaced with "Other Spices." So I guess there's a limit to what companies are legally required to tell you. I'm still tempted to believe the cloners and copycats-- they have labs dedicated to stealing the secret recipes. Makes cooking so much fun. Anyway, this is a great forum and I'm delighted to find it. :P
