I've been toying with this for a couple of months and got it to where I like it. Makes enough for 2 -3 chicken breasts.
Juice of a large lemon (about 2 TBSP)
2 TBSP EVOO
2 normal size garlic cloves finely minced
1/2 tsp dried oregano
1/2 tsp table salt
1/2 tsp fresh ground black pepper
2 TSP grated Parmesan cheese.
Mixed all the stuff together. Put chicken breasts in ziplock and add marinade. Shake bag a bit to cover breasts. Put in fridge for 2 - 3 hours.
