Interesting take. Pretty sure they shoot for the wedding / party style instead of one bite competition profile.

Sweet is pretty standard East Texas flavor profile, especially on ribs. Sometimes I cook mine sweet, sometimes I don’t. Depends on my crowd.

I don't want to eat competition style food. I'll take Stanley's any day.

It seems super sweet is predominant and honey seems to be a key sweetness used in judging i volunteered for.

4 Ibca competitions judged this past year. Honey honey honey and many overwhelming honey. too sweet for my palate.

My wife and my father in law however loved the sweet.

I’m more of the salt/heat light sweet with some vinegar but it seems more winners are really sweet

Big fan of Stanley's. I prefer their Brisket to the Ribs, but it's all good.

What i really loved was the live band that played Friday night. Lots of college kids running around made the wife and I feel young again!

Yeah, the owner Nick is a musician, so he's a big supporter and promoter of live music. If I were to open a brick and mortar BBQ joint I would hope that it could be half as cool as Stanley's.
