I didn't say that I make it...rather I have a deal with my neighbor lady (a former Florida gal). When I smoke a pork butt, I give her some of the pre-smoked skin. She dries and seasons it...minces it somehow, and then gives me some Cracklin Corn Bread. So we work together in joint operation.
Absolutely delicious.
Color me intrigued...

I'd be curious to see her recipe. does she mix corn meal or flour with the cracklins?

That is the reason I asked if she put cornmeal or flour in it to bind it. I don’t put egg in mine but cracklings might require it

All of that isn't going to fit in a cast Iron skillett Emm. You may have to pour it up in anither kind of pan unless you want it about 2 1/2" thick. i like my cornbread about 1 1/4".
The recipe is interesting. Where would we find fresh cracklings?

Re: Where Is The Cornbread?
So crackling to me is the the skin of pork grilled until it starts crackling and bubbling. Great snacks while drinking,I take some to the library every Friday night.

9" skillet is going to produce a VERY thick cornbread: if that's what you like, fill'er up. It may even run over with those quantaties of ingredients

Just plain salt on top. Then grilled. They are the shizzle.

Re: Where Is The Cornbread?
I put salt on everything except Ice Cream, however, I had some cracklins once with a Cajun Seasoning that were also the shizzle
