I have always heard talk of how great the 1 in Llano is so me & the Mrs stopped in...

An experience was had.... they opened the pit, we looked and kept on walking. ( Newbies, we didn't know we were suppose to pick our food there )

1st item that caught my eye was the prime rib....been wanting to smoke a prime rib, just havent pulled the trigger on that 1 yet.

We got a sampling of prime rib, pork ribs, brisket, and sausage.

Prime rib was out of this world!! couldnt find horseradish sauce tho

Pork ribs had a good flavor, but their color didn't look like my ribs ( almost white, thought maybe they had been boiled )

Brisket the wife liked, juicy and tender

Sausage, I didnt care for but every one else thought it was good.

I would go back

get the beef rib next trip. all i get anymore and fill up on beans and bread

I have always been a big fan of Coopers in Llano and the new location in New Braunfels held true to the original.

The building is nice, big and clean - lots of room compared to the original.

Brisket - excellent, perfectly cooked, excellent bark - no sauce needed. I realized now that they run heavy on the salt in their basic rub and frankly I like it. All around it was the best of the three meats I tried.
Sausage - good, nothing spectacular, but really good.
Spare Ribs - Could have skipped these, I think we got the culls on ribs, wouldn't order those again.
Free Beans, perhaps the best bargain in the BBQ world, theirs are very traditional and very good.
Sauce - skip it, really.

Overall, the reason I have always liked Coopers was the excellent brisket and they did not disappoint. Next time I'm loading up on brisket, free beans and free bread - no sauce!. 8)

Not a fan. They over spice the meat. I'll drive up Hunter Rd. to Hays Co. BBQ first, or Granzin's downtown, or even Rudy's down the street before I'll go back to Cooper's

Gator, you got lucky.

the brisket is hit and miss there and mostly a miss. Dry and tuff.

But you really missed out by not gettting a beef rib. Thats all I will eat there now. ALWAYS good.

And I actually like the sauce.

And yes I like the salty bark also
