I was just in New Braunfels at the river last weekend and noticed there is a huge Coopers down there now as well. Exit 189 down a mile on your left like you were going to the schliterbahn.

I ate lunch at Coopers in new Braunfels last week. Had the monster pork chop. No complaints. In Llano today, they had customers waiting out the door and down the front of the building. Amazing!

I went by the stockyards today and was amazed at the site of Cooper's. It is going to be a massive bbq joint. They already have the metal roof on it. Star Telegram said it will open in November but it looks like it will be finished early. Looking forward to there brisket.

Was just thinking about that today. Last I talked to them they told me the end of Sept. Was wondering what the status was on it.

I dropped by there for lunch last Friday. Here are my quick thoughts.
- If you like Hard8, you will love Coopers. I understand that Hard8 fashioned their business after Coopers and this is a case where the original is better than the copy. You line up at the holding pit, tell the man with the knife what you want, and he puts it on a tray lined with butcher paper. From there, you move inside, they weigh and wrap it, and then pick your sides/desserts. At the end, you take it to a cashier and off you go! They have all the condiments on a bar near the drink stands and the big 'ol pot of beans (free).
- Brisket came out tender and tasty. If I had to guess, I would say that they cooked it hot and fast wrapped mostly in foil. Not a lot of smoke flavor (not like Cousin's BBQ) and the texture was more like roast beef than what I like, but for that style of BBQ, I haven't had better.
- They also sell Beef Ribs. Mine was cooked a bit on the dry side, but I liked it! I would say that it was the best beef rib that I have ever had (I guess I like Beef Ribs crispy!).
- The sausage was nothing memorable other than it had a pretty good 'snap' when I took a bite (I snuck a few bites from my co-worker's plate). Dense packed with jalapenos. Not super spicy (which I think is a good thing).
- Expensive! For 1 modest slice of Brisket (off the fat end) and 1 beef rib, and water to drink, I forked over $11.
- Big, but not as big as I was envisioning. I was told that it was the biggest BBQ joint in the world. It might be, but it wasn't that much bigger than Kreuz mkt in Lockhart and maybe 50% bigger than Hard8 in Coppell (not taking into account Hard8's outdoor seating).
Bottom line, if I am in the area, I would stop by for a bite, but I don't think I would make a special trip out there. I am glad that Cooper's decided to open a location in DFW. Maybe they will help to raise the bar a bit for future BBQ joints here.
