Thanks guys! I was born and raised in Austin(Pflugerville actually) but have lived all over since joining the Navy 8 years ago. I bought a char-broil silver smoker about two months ago and have smoked every weekend since. I am hooked. So far I've smoked butts, salmon, sausage, brisket. I'm smokin my second brisket right now. The first tasted great but was a little tough. Hopefully I won't overcook it this time. Great site. Lookin forward to learning from "all y'alls" experience.

Welcome aboard and glad you found. Don't pull that brisket off the smoker till it's at least 190* internal. If the 1st one was tough, could have been it didn't get to the "majek" stage (190-195*).

Hey Slide welcome. Used to go to quite a few training classes in Austin and a pal and myself would drive out to a school at Pflugerville to play tennis. Neither one of us was very good at but we were fairly evenly matched. It was sorta a wide spot in the road back in them days. Hear it has now been disovered by the yups and it covered up with high dollar houses. Supposed to have happened to near all the picturesque little towns outside Austin. Dont bees no lurker.

WElcome Slide! Glad to have you aboard! My brother was in the Navy and is now an Officer with the Reserves. He just got back about a year ago from almost a year in Kuwait. Ya'll do us proud!
