New to the site/ just want to introduce ourselves

My family and I are originally from Texas, Houston area. We were introduced to the BBQ circut by a friend of ours when I worked for Halliburton Energy Services. We did a huge cook off that he sponsers each year and man we were hooked. Ever since that time 22 years we have devoted all of our time to learning and educating ourselves in the art of Texas/ Southern BBQ. We moved to Renton, WA in 2003 for work purposes and found that to be a mistake, but we are making the best of it for now. We decided while up here working that we were going to get into the cook off's, and it moved into other area's, now we are trying to educate and teach the folks up here about Southern Flare, we are teaching about taste pallets and Texas spices. Up here in WA most folks are into sweet sauces and hot spice. There are no true BBQ places here like there is in the south, most places make the food so spicey hot that the taste buds get burned and it hide the terrible taste of the meat here. So that sums it up. But we will moving back to TEXAS by next June 2009, cant wait. Our passion really comes from the wife, her family owns Demeris BBQ in Houston. We'll I look foward to the site and getting to know ya'll......................

Welcome. I've ate at the Demeris off Hempstead Rd. DID NOT go away hungry. Good to hear you are trying to spread the southern flavor up north. I like that hot bbq sauce, but on the side to dunk my Mrs. Bairds in!

Thanks for all the welcome's, as for writting the book thing it's kinda being transferred to our website, if I had to sit and write a book I would never be able to compete. Being able to show someone technique or a style is what I would rather do, its been said that :[ you learn more from watching and asking questions, than you do from reading]. Im not here to step on Gator's feet what so ever and I tread lighty with our site giving full respect not to impose on the hard work of others. Like ya'll I dont know everything, thats the wonderful thing about this field. that's why I join other sites to exchange info for something that might make me the best in the world. But as I have found out that there are over 10,000 different styles of Que-ing, so all the opinions will be different but relate to the same thing. But like I should have said earlier, there is only one style and thats TEXAS style. I miss where everything is done BIG!!!!!!!!!!

Aloha Down Yonder BBQ,

Welcome to the forum. We too are here in the Pacific Northwest, in Everett about 30 miles north of Renton. I been cooking for at least 55 years, first helping mom and grandpa in their catering biz while I was growing up in Hawaii.

Been doing Hawaiian style pit BBQ (in the ground) and also rotissing whole hogs for as many years. Got into TX style BBQ within the last 6 months and just got delivery of a 24x48 Gator Pit. Still learning and as of now not very good at it. Would like to get some hints from ya... :)

You guys are killing me talking about the Ms. Bairds bread, we cant get anything like that here. But maybe someone could do me a favor, I need some Blue Ribbon Sausage can someone buy a bit, I'll send ya the cash and send it here to this state of cold and misery????????????????????

By the way is the Gator on this site the same as the one who builds Gator Pits??????
