Coach's BBQ here. I'm from Weatherford, Texas. I have been smoking slow and low for about 7 years now and really enjoy it. I have a YouTube Channel "Coach's BBQ" where I have posted a few videos of smoking tips, construction tips and some local BBQ joint reviews. Please stop by and check them out.
I use a cinderblock indirect smoker and a mobile converted propane reverse smoker trailer as well. I have never used a pellet smoker although I admire the convenance I don't care for the taste so much.
I recently have ventured out and started a side of the road BBQ Shack from my trailer. The first weekend we sold out in 2 hours both days Friday night and Saturday afternoon! so Im looking for some tips from folks who may have done the same thing.

Welcome to the forum and I won't hold it against you that you don't like pellet smokers.
