Hey folks,

I am originally from Tennessee, but live in Connecticut now for work. Being from Memphis, my background is in pork. Time to break out of my comfort zone and start smoking brisket and that is how I found this site. Currently smoker is a Backwoods model.

Thanks folks, and don't boil any meat(s). I realize that i am way up in Yankee land, but the good thing is the introduction of Memphis style BBQ.
