I've been lurking for awhile decided to join the conversation. Hope everyone has a good weekend. Becuase this is Texas BBQ, here is the obligatory brisket and beef rib pic! I live east of Dallas and except for military serivce have been a Texan my entire life. I've noticed people have a hard time finding actual 3 bone plate ribs or distinguising between 4 bone chuck and plate ribs. I can tell you there is a major difference in size. Once you have an actual 123A beef rib you will easily tell the difference. Both are fantastic. The only place I know that keeps 123A beef plate ribs in stock at all times in Dallas is Rudolphs Meat Market in deep ellum. Go in and ask the butcher and he'll know exactly what you're talking about. Its amazing how many actual butchers do not know the difference. I've also attached a picture of what they look like behind the counter, before being cooked and while they are cooking. Hope this helps somebody.

Big welcome from east of Dallas as well. And a BIG nod to Rudolphs Meat Market. Have known the family for years. Hands down the best shop IMO in Dallas. :texas:

I appreciate the kind words from everyone. Boots how is Sugar Bacon? I have been wanting to get over there and try that place. I know it isn't necessarily a BBQ joint but I do like some good pork belly. I stopped by Hutchins BBQ last time I was through there and thought it was pretty good.

I have a friend who loves hunting, with a .308, he has 2 planes, he flies to south Westland to hunt. He's based in hokitika. Don't know anyone that bow hunts. Although I just remembered, capt jack on here does as well, he's a nam vet.
