New Guy on an Island just off the coast of Texas

Postby ktdtx » Mon Jun 24, 2019 5:15 pm

Looking to improve my hit or miss skills.
Current house has a nice outdoor kitchen area--recently added a Blackstone Griddle and just backed up the money truck and got a Memphis pellet.
Years ago had a Pitts & Spits log burner but wife developed a pretty good sensitivity to smoke--can't burn much wood without smoke so that went away and on to propane grills for a while.
Her sensitivities seem to have decreased so now--trying a "low smoke" smoker.
First brisket last weekend and I miss the process of messing with the wood and the air vents all day while drinking some beer BUT--it's nice to start a 225 degree cook and go run errands and come back in a few hours and it is still 225. Almost feel like I'm cheating.

welcome do post often and include pictures...
on the pellet smoker the women folk around my house dont care for much smoke either, so I am there with ya, wishin I could put more smoke into the food, but the wife says nope it is just fine with the normal pellet cooking method, I have added extra smoke with my pellet cooker, but only once or twice, got lots of comments from the "peanut gallery" so for me just happy to get to cook out every now and then.... :whiteflag:
Don't count every day, Make every day Count
Good Cue to ya..

Not an island, but I hope to one day move down to Kemah on the water.
