Hi out there. New here to site. Not new to queuing or smoking. Just picked up new ultimate patio from Johnson Smokers in Ennis. Got it all seasoned (onions and bacon) and ready for a Christmas Eve night for a brisket, rib and turkey smoke :santa: . Really impressed by the smoker. Chad is a good guy to work with. Pics to come.

I used to live North of you and West of Lampasas in a little settlement called Nix. Our Car Club was based in Burnet and I would always pick a my Hot Rod Buddy and call it Burn-Net - - and he would always say "It's Burn-IT DurnIT" :laughing7: :D :lol: :texas:

Welcome. I have had my Ultimate patio for years. There are a couple other members here who have one as well. You will love that smoker, I promise.

Fired that UP yesterday seasoned it in for about 6 hours. Fire management is the cats meow. Very even temps. Pic to follow.

Thanks Old and Willep getting smoker ready and set up for a long cold night in Burnet tomorrow night. Outlaw on your Ultimate how many splits do you start out with to bring to 325 to 350 and bring it back. Was thinking 4 with a pile of lump in the middle started by a weed burner.. What says you.

Willep I have family in Daton grew up in Pasadena and West Texas. Have cooked at the Daton Old Time Days. Family cook team ( Rubbin & Grubbin ) on hold right now since brother and brother and law are cooking and keeping the troops feed in Afaganistan for the last 6 years.

Dayton and Liberty. We also were partners in a restaurant in Liberty until the economy went to a heck and hand basket in 2009.

This is my typical start up. I use oak exclusively. It will get way on up there at first but I let the coal bed stabilize and then add the meat. Mine has a sweet spot in the 265 or so range that is easy to maintain with smaller splits ever 45 min to an hr.

And the first real smoke starts. Turkey tonight and around 4Am put the 16lb brisket on. Then five hours before it’s ready to slice, ribs down along with smoked Hal poppers
Taking notes of all particularly the new smoker. May start up a review thread with pics and all about the Johnson Ultimate Patio.

Only other thing I can recommend is completely disregard the factory installed thermometer. There is a huge difference between grate temp and top of chamber. HUGE!!! Looks good so far.
