Greetings from a town called Paarl, South Africa.
Thank you to eveyone of the time to post such great information.
Today I sit with a dilema which I need some help with - and seeing as South Africa is not a BBQ area - I am gonna needs lots !!!!
I have build a reverse offset unit from a 210 liter (55 gallon) style drum - with a brick fire box, run it 3 times so far,
1st Try Baby back ribs - result was ok
2nd Try was chicken - result light smoke and slightly over cooked
3rd Try spare ribs
The food come out ok, and I have many many a fire to learn this amazing art, the you all are enjoying so well.
Things to know from my side - our meat is way leaner here and butchers dont know the cuts and joints seem smaller than in the USA and we dont have any manufacturers of BBQs here - the help I need is with some ideas or designs to start with.
I have learnt much but need to learn much more still - I am looking for a off set bbq design that I can fabricate here - something like off set and revers offset smokers.
Any and all help will be appreciated ! even the smallest bit of advice
