Hi guys,
great to find a texas bbq forum. I'll be asking a lot of questions as there is some wisdom here.
Ive been smoking for many years on a POS(pitiful offset smoker) and it finally got to where I wouldnt use it any longer. it burned too much fuel, wouldnt get hot enough, and leaked everywhere, and was a PITA to tend.
I finally put it out on the side walk and started looking for a new smoker.
so after doing a lot of research I just built a UDS ugly drum smoker. seriously this thing is amazing and I think everyone should have one.
It was very inexpensive to build.
it uses so little fuel its surreal
temp management is easy. I dont even bother using the auto temp fan I bought for it.
no leaks anywhere
great flavor
almost a set it and forget it cooker
i use a heatermeter that has a port forwarding enabled so I can control my smoker from anywhere in the world, using my phone.
Im back to smoking again and I am here to learn.

If folks discovered how easy and inexpensive it is to have a good smoke cooker there would be a lot more smoke aromatherapy going on.
Several years ago we had a gathering of forum members and built a UDS in about an hour for one of the members and I'll be that thing is still smokin' today. There are no doubt some pictures of that event here somewhere.

it was really quick to build with the exception of the charcoal basket since I had to cut that out of a 4x8 sheet of expanded metal and weld it all.
Im getting all my friends into the UDS craze.
plus mine is upside down so clean up is amazingly easy.
having said that though I will be looking for a stick burner for a when I dont mind tending a fire and want a little more smoke flavor. Ive noticed that while the meat from the UDS comes out smooth and sweet the very first bite I always feel like its light on smoke.
