Hello from New Zealand

Kia ora (hello),
Just want to say hello. I'm Chris from Wellington, New Zealand.
I don't have no fancy offset smoker but get by with building a fire on one side of my grill for my low(ish) and slow. I haved smoked brisket, spare ribs chicken and lamb on it. Oh and the odd fatty.
I'm also a bit of a hot sauce junkie.
Don't worry guys I won't be putting any beans in my Texas Red.

Hello Chris, and welcome. Have you ever hunted then smoked or grilled a Red deer? Wait, I see you are from Wellington. Hey, I know a Chris in Wellington. Do you own 2 black labs named Max & Nova? Nah, you couldn't be the same Chris I know. Anyway, have fun around here.

Boiled ribs? No worries here, I don't listen to the wife on that one either.
