Kia ora (hello),

Just want to say hello. I'm Chris from Wellington, New Zealand.

I don't have no fancy offset smoker but get by with building a fire on one side of my grill for my low(ish) and slow. I haved smoked brisket, spare ribs chicken and lamb on it. Oh and the odd fatty.
I'm also a bit of a hot sauce junkie.

Don't worry guys I won't be putting any beans in my Texas Red. :laughing7:
