Thanks to all for your replies, now I'm ready to bbq, got a Char-Broil offset smoker and a couple recipes! Small things can lead to bigger things so I'm starting small, lots of Salmon up here 6 miles from the Columbia River so may try some of that soon but right now its country spare ribs!!
