looks like you cooked a good one, can you tell us ( and for those following) what you did different from the earlier cook to improve the color?

I foiled the water pan, added sand, then foil over the sand. Otherwise, nothing else was changed. The WSM seemed to hold even temperature easier than with water in the pan. While smoking, one observation was no pooling of moisture on the brisket. Even with a good spritz, the moisure would evaporate and not pool. So, the bark set-up much nicer. I need to make another brisket under these same conditions, then i will be more confident that my bark was solved. I am just a home cook (family & friends), so the brisket rotation is once a month or so. I will report back on the next brisket to share success or failure.

good to read... adding the sand makes the "mass" greater and I would think the added mass would help stabilize the temperature, I did a similar thing to a traeger, by lining it with fire brick, made it heavy but sure did stabilize the temps even on windy days.
