I've been using regular grills to cook meat...but I want to learn to smoke meats and have never even used a smoker, much less know where to even begin when it comes smoking!!! Any help, comments or suggestions are very welcome and needed! I'm so happy to have found a place with so much energy about meat as I want!!! Thanks

Welcome, Brian, how are things out in God's Country? These members know their stuff so you're at the right Forum for this info. Psssst, don't tell anyone but I use an ECB (El Cheapo Brinkman) with a water pan to smoke butts, hams and birds and have always been pleased, altho they will limit the size and amount of meat you can smoke at once. My "only" reason id the price and amount of times I would smoke something.

Welcome to the forum, there are some of the best BBQ cooks on the planet on this forum.
Start by doing some reading and see how the meat is actually kissed by the smoke and heat.
feel free to post pictures and ask questions, but start by reading and re reading and looking at the pictures.
We'll get ya going in no time, a meat thermometer would be a good thing for a total newby to start with $10 to $20 at HEB
chicken is cheap so you can afford to start with some, it is done safely at 165 or 170 degrees internal can be done in about
an hour or more depending on fire control, please post pictures :D
