Newbie...Firedup6
Hello all....just recently found this site. Just retired after 23 years in the fire service. Now have lots of time to enjoy the smoker that the guys built for me as a retirement gift. Have done lots of cooking on smaller smoker but nothing this big. Will appreciate all the help I can get. I guess once a smoke eater always a smoke eater.

Ok guys...thanks for the warm welcome. Now for the first question. Not sure if this is the right thread or not but here goes. I will be cooking for a tailgate party next weekend. First road trip for the new smoker. I am pretty sure I have the smiking art down, but have never cooked for 50 before. I am planning on brisket, sausage, spare ribs, and a whole pork loin. How much would y'all buy? And if I start at about 5 a.m. will the brikets be done by about 6:00 p.m.? Thanking you in advance for your candid concern : )

check out the catering planner at this site, it works and is user friendly.
An hr a lb on the brisket at 225-250 is pretty average, foiling about 3/4 way thru will speed up the process.

My concern is that we will have to taste test everything. Please send directions!:lol:
