Hotsauce says HI

Curious to see if you all will welcome a Northerner as a real BBQer.

I am in Kennewick, Washington. I have been a griller for many years but a true bbqer for only 4 to 5 years. I started on a offset style bbq and it was alright but demanded close attention to maintain desired temps and had to refuel several times on long cooks; nontheless I learned a lot with it. I have since March of 2007 been cooking on a Komodo Kamado, boy I have to tell you all what a great cooker! It is 99% airtight, retains heat and moisture, easy to set and maintain temperature and a full load of charcoal on a slow cook will last 24 hours or more. No I am not a salesman for these cookers I just really like it is all, it turns out great bbq with little effort, you really have to try hard to mess up with this ceramic cooker.
Enough about that, I joined because after "touring " the site I decided this forum offers a novice good info. Always looking for new great recipes and tips.

Welcome aboard, hotsauce!

If you have questions, go ahead and ask. You'll get a lot of answers. Some of 'em may even be right. :D
