Hey All,
Opening a Smokehouse in Scotland - inspired by your posts. Looking forward to learning and picking up more tips along the way. As well as Brisket, Shoulder and Ribs - we hope to be hot smoking fish and our cold smoking our own cheese...
I have an FEC 240 Pellet and an Alto Shaam Cook and Hold. I also have a chip smoker as a back up - to experiment with.

In all seriousness, Howdy Podner, we Texans (and our brethren from round the globe from Texas to Maine to Norway to New Zealand to Italy and back) bid ye welcome.
It’s a lively and spirited crew as you will find, we love photos of yer cooks and good conversation.

Welcome! I haven't been here long, but I really love the international involvement in these forums. Texas BBQ cannot be contained
