Texas is famous

I have been asked to provide about 4 hrs. of cooking demos at a cook-off in Seattle in about a month. I have assembled a very talented group of helpers/cooks to do the "heavy lifting". I would sure like to include a Texas recipe that has "made in Texas" all over it. We have a Casi group doing chili already but are open. What in your opinion is THE signature dish of the Lone-Star State.

I'm talking BBQ and anything else such as Frito Pie or??? We know what made Milwaukee famous ( my birthplace by the way :lol: )

Anything with beef would be my suggestion.

BBQ Brisket (or any BBQ Beef).
Texas Chili
Steaks (you could SuckleBuster a fews of those!) :lol:
Lot of Tex-Mex choices
Sweet Potatoes
Black Eyed Peas
Pinto Beans


Any of those strike a chord? Whats your cooking limitations for this dish? IE - prep time? cook time? are you going to serve it?

Gator, They all are Texas (imho, which doesn't count, ie. Milwaukee :lol: ) We have 4 hrs. to prep, cook, and present, I could do brisket, prep and put it in the Klose and take one out done the day before, but am wondering if that has the same impact as something done on site. We will not serve ( Health Dept. thing ) but we expect over 25K in attendace during the day. I have a one hour slot dedicated for Texan vittles, I certainly can do that "show 'em the prep" and bring the cooked one out of the magic oven, looking for ideas featuring Texas and 1 hour to do it in. You are helping me alot so far,

If you are going Texas BBQ, then Pinto Beans, Potato Salad and some type of bread is in order. A lot of BBQ joints around these parts give out "white bread", a few do homemade rolls. There are a few Texas Style recipes on my SuckleBusters website.

A couple of more Texas Style dishes;
Fried Green Tomatoes
Pecan Pie
Corn Bread

Im sure some other members can their favorites.

I'm really leaning towards the brisket idea and making the sides and pull out the brisket, slice, plate it along with the sides we just made and show what a typical Texas bbq plate looks like. I will search the site for some likely candidates but if you have one that is a must taste let me know. Thanks Gator, I owe ya one.

How about chicken fried steak with home fries and sawmill gravy or a chopped brisket sammie with sides?
