I intended to pick up another Wagyu Steak today but when I saw these 2+# cuts I picked my favorite and found myself at home trying to decide if I could possibly cut them into maybe 2 or 3 steaks. Even tho it is a 2 and 1/4 lb chuck shoulder Roast, I decided to change that to 3 nice size pieces and decide ?what? later.
The marbling was what caught my eye in the first place.
Used a fat line to turn it into two.
Then I decided to half one piece for small thick Steak cuts but I can always do them another way if I want.
If I do steaks from the smaller cuts, I will wrap them with Jalapeno Bacon and Grill.

Can't wait to see if they'll work as a Steak.
I started to keep it one piece and do it KAM's PAN STYLE so maybe next time I'll do that.

Nice. Sous vide may help it work out as a steak better. Or maybe soak in sparkling water for an hour or two to make more tender before grilling.

Decided to Marinate one of these along with a thick cut Pork Chop for SWMBO. Then I'll grill them on the ECB tomorrow and see what happens. Also haven't had a twice baked Tater in a while so I'm looking forward to Friday's Lunch
