It's been a long day. We have the 10 month old Grandson so I've had to work around this; he's a pill.
These pictures don't do this justice, it's dark with a flash. The Pecan roasted tomatoes made this the best I've ever made; It's off the charts. I'll be glad to share the recipe if anyone is interested.

Fantastic! I’d rather have a jar of that than the recipe, but beggars can’t be choosers, so, I would love to see what you put in it and how you did it. My salsa recipe is a fresco, but that also means there’s none to save for the future.

OK, let me preface by saying that roasting/smoking FRESH tomatoes creates a superior product. If you can't do that, Wal-Mart has canned " Fire Roasted Diced Tomatoes" that are about as close to fresh as I've found. If you're not going to can them, you could eliminate the vinegar. I guess you can do the math if you want to make smaller batches. This recipe will make 6 or 7 pints per batch.

8 cups chopped tomatoes
2 cups chopped onion
1 cup chopped jalapeño
4 cloves of garlic minced ( or buy those little jars that are already minced) use 2 teaspoons or to your liking but DON'T change anything else
1 cup vinegar
1/4 cup sugar
1/8 cup PICKLING Salt

oops, I forgot; juice of one lime or 2 Tbsp. of the jarred stuff

I get this to a boil and then let it simmer for at least 30 minutes.
