Trying something new . We had our Kids, Grandkids, and Great Grands over tonight for Mexican Food , games , and big fireworks with a bonfire ; much fun .
Tomorrow to the wife's folks , 89 & 87, for lunch . They asked for brisket ; FIL eats at 12:01 on the dot. So, I'm doing a couple of things I don't normally do:
1- I separated the flat and point
2- I'm panning using KAM's method.

I smoked them from 6 until 11 at 225, pulled , panned , added a cup of beef broth to each pan. Covered tight with foil and stuck them in the oven at 185. I'll see how they look when I get up.


** KAM didn't endorse the oven; I'm just too tired today to feed the stickburner all night

Just checked it. Smells great, bark isn’t the same. Temp at 180 which is right where the oven was set. Kicked it up to 235; should be perfect by 9 o’clock

Rambo - I believe KAM opens up the foil at the end to reset the bark.

I uncovered at 8 asper Sooner's reminder . Perfect , 200, like hot butter :D . put it back in for 15 minutes uncovered . Covered in new pan now resting . will slice at 12
