What'cha Cooking Christmas?
We make Mexican Food Christmas Eve . I've been asked for a Brisket Christmas Day so I picked one up.

Hahaha! I do Mexican food for Christmas as well. Tamales, enchiladas, Chile rellenos, churros, flour tortillas, chips and salsa, rice and beans. All homemade.

We have the in-laws over Christmas Eve. I think I’m going to do some flat iron steaks. There’s a Blackstone honey pepper Brussels sprouts recipe I’ve been eyeing as well. I think my mother in law is bringing a potato dish and dessert. Not sure what else yet.

We're going the traditional way on Christmas eve. Pork belly with crisp skin, ham roast with crisp skin and pork patties. Served with potatoes and sour cabbage. Dessert is whipped cream mixed with riceporridge.
The day before we will have burnt ends and the shotgun shells I made a while ago. Served with twice baked potatoes. First time bbq dinner in the Christmas.
We're staying at the cabin and will have both my parents and the in-laws there for a couple of days.

Have some orders to fill for pork loins and ribs. Will probably throw a pork butt on for Christmas Eve sandwiches. Wife's company usually gives out Honeybaked Hams, but I haven't seen the gift card this year. If it doesn't show up, I'll smoke a prime rib to 110 IT and sear over the coals.

Right now, it looks like I won't be cooking anything on account of we'll probably eat out with Both Families. MIght make some chips and dips but not sure yet

+3 on Mexican; in this case NEW Mexican with scratch made stacked Red Enchiladas w onions and Oaxaca cheese, Wackey Guacky, veggies TBD, stewed cranberries and clementines, and fresh homemade Bourbon Pecan Pie.

I'm pulling the pit down to the farm and smoking 2 turkey breasts and a 3 bone rib roast.
My father in law is cooking porchetta for the first time, so I was asked to "bring backup".

I like there summer sausage Matt. My buddy used them to cater his rodeo crowd at the cook off last year. They have a location up here now. I think they had Praseks do the brisket, then they did there own ribs and sausage.
