Italy In The Poconos
Well, not quite Italy here but it has the vibe with having Mom up for a few days. She brought with her the tools of the trade that we got her last Christmas.
This was the first time any of us used a Pasta Machine. We usually buy Pasta from a good Italian Store but this time the Eggs, 00 Flour and Semolina were the Genesis of what turned out to be the Best tasting Linguini, Sketti and Raviolis we've had.
Mom and the wifey worked thier magic learning as they went. Within 20 minutes, the first batch of Fresh Pasta is on the hanging rack ready to go in the hot water.
Meanwhile, the pasta duo got the Ravioli Tablet in use while I worked on the fillings.
One was a traditional Ricotta and Parmesan and the other was a Lump Crab filling.
Both turned out delicious but the Crab filling was a home run.
Sauced the Cheese Ravs with Mom's Homemade Meat Sauce which has been a staple since she could cook. My favorite Sketti Sauce hands down, with a little sweetness at the very end.
It's funny, I don't eat Skettis, only Linguini, Penne, Riggatoni and Ravs.
On the other hand, Mom, Deb and Evan will eat it 24/7 if they could
The Crabiolis were paired with a creamy Mushroom/Crab/Lemon Zest/ Capers/Onions/Sweet Peppers and Lemon Juice sauce which put them over the top !!
I think we will be buying one of these exact set ups very very soon

That’s awesome. I had that kind of relationship with my Meemaw. I feel fortunate to have her around well into my adult life. We did everything from grill, cook in the kitchen to play catch together. Cherish those memories.

That's a fantastic meal. I love pasta in all flavors. This is a feast. Raviolis is great. With crabfill it's extraordinary.
I will show this to my wife. I bought her a pasta machine for Christmas some years ago, after her own wish. Still unused.
